CHOCLATE FUDGE


CHOCLATE FUDGE
a fudge that is  made with only  two ingredients: chocolate and ice cream!
 it's important to use high-quality ice cream and chocolate. I'm telling you right now that if you use cheap vanilla ice cream and regular chocolate chips, you'll be disappointed in this fudge. But if you use a chocolate that you enjoy eating, and your favorite high-quality ice cream, you'll be amazed ! If you're feeling adventurous, I suggest you use a fun ice cream with mix-ins like fruit, nuts, or chunks of cookie dough or brownies.
Ingredients
1-1/2 lbs  semi-sweet chocolate, finely chopped
1-1/2 cups ice cream, slightly thawed
Preparation:
1. Prepare an 8x8 pan by lining it with aluminum foil and spraying the foil with nonstick cooking spray. Take the ice cream out of the freezer to be thawing while you melt the chocolate.
2. Place the chopped chocolate in a large microwave-safe bowl and microwave until it is nearly melted. Stir after every 30-40 seconds to help it melt evenly and keep it from overheating.(or you can melt the chocolate in a double boiling method)
3. When the chocolate is nearly all melted, stop heating it and instead stir it until the remaining bits melt and everything is smooth.
4. The chocolate should be melted and warm, but not hot to the touch, and the ice cream should be melted and soft along the edges, but not liquefied. Add the ice cream to the chocolate and stir well.
5. In  low flame,cook this  mixture,stir well. The hard chocolate pieces should have melted and smoothened  out.it takes at least 30 minutes At the end of the process, you should have a shiny, smooth liquid fudge.
6. Pour the fudge into the greased  pan and smooth it into an even layer. Allow the fudge to set at room temperature for at least 4 hours, or in the refrigerator for at least an hour.
7. When the fudge is completely set, remove it from the pan and use a large sharp knife to cut the fudge into small squares to serve.
8.Ice Cream Fudge  can be stored in an airtight container at room temperature for up to two weeks.

STRAWBERRY JELLO


Strawberry jello  ,simple nd tasty recipe.perfect valentines gift for ur special person..enjoy!

STRAWBERRY JELLO
2 packages  Strawberry Gelatin
2 and 1/2 cups boiling Water
1 package  instant Vanilla Pudding mix
1 cup cold Milk
Dissolve gelatin in water in a bowl and set it aside for 30 minutes.
Whisk the pudding mix with milk until smooth in another small bowl, for 1 minute..
Quickly pour gelatin in the bowl and whisk until well blended.
Pour the mixture into an oiled 13-in. x 9-in. x 2-in. Dish and let it chill until set.
Cut into heart shapes jello using a heart shaped cutter or anything you might find easier.

PAPAYA HALWA





Here is my papaya halwa recipe,really sweet,sticky and mouth watering one.i searched lots of blog for the recipe of papaya halwa,but disappointed ,all are softy halwa.i want that sticky halwa ,i ate it before .hmmm its my turn..i made it.its easy ,but the stirring work is little hard.its 1/2 hour i  stir it in a low flame.my hand told me stop !stop!i cant stop,becoz of that sticky halwa...ha ha no problem,if u work hard ,the result will get superb..thats my mind told me..wow the result is superb!!try it and enjoy!!!

INGREDIENTS:
Ripe papaya(medium size) – 1

Sugar - 2 cup

Ghee - 4-5 tsp

cashew - 10 nos

cardamom powder- 1/2 tsp

milk - 1 cup
METHOD:

Make cashew into small pieces. Fry the cashews in ghee and keep aside. Boil the milk for 15-20 minutes in medium heat until gets thick. Heat one tbsp ghee in a pan, add the papaya pulps and fry till the smell vanishes. Cook it in medium heat and stir occasionally for 5 minutes. Now add the milk and boil it until milk evaporates, then add the sugar and stir continuously in low heat. Now add the remaining ghee and stir on low heat till the mixture collects in a soft ball or the ghee oozes out. Now add cashews and cardamom powder. Mix well and transfer to the greased plate. Let it rest for half an hour. Cut into desired shapes and serve.

MINI SQUARE SHORTBREAD CRUST



1 cup (130 grams) all purpose flour
1/8 teaspoon salt
1/3 cup (35 grams) confectioners’ sugar (powdered or icing sugar)
1/2 cup (113 grams) cold unsalted butter, cut into small chunks
Preheat oven to 425 degrees F (220 degrees C) and place rack in the center of the oven. In your food processor, place the flour, sugar, and salt and process to combine. Add the cold butter and pulse until the pastry starts to come together and form clumps. Transfer the pastry to the prepared pan and, using your fingertips, evenly press the pastry onto the bottom and up the sides of the pan. (Can use the back of a spoon to smooth the surface of the pastry.) Gently pierce the bottom of the crust with the tines of a fork. (This will prevent the pastry crust from puffing up while it bakes.) Cover and place the pastry crust in the freezer for 15 minutes to chill. (This will help prevent the crust from shrinking while it bakes.)bake the crust until golden brown, about 13 - 15 minutes. Remove from oven and place on a wire rack to cool. It is now ready to be filled.
Use ur favorite filling…here I used caramel nuts with fruits
Brown sugar – ½ cup
Butter   -2 tbsp
Heavy  cream -  ¼ cup
 Take brown sugar and butter and combine and melt in a saucepan on medium heat until sugar dissolves . After sugar melts  add the cream slowly  in a low flame,then add ur favorite nuts(pista,badam,cashew nut …etc..),pour dis  caramel in to the crust immediately. After decorate with fruits if u likeJ

SOHAN HALWA

 Ingredients:
 Corn flour – 5 tbsp
 Sugar – 1-1/2 cups
 Water – 3-1/2 cups
 sliced almond or cashew nuts– 1/4 cup
 Ghee – 1 tbsp
 Cardamom Powder – 1/4 tsp
Orange food color – few drops
Bring 3 cups of water to a boil. Add sugar and cook till it reaches a sticky consistency. No need for one string consistency which is a plus in this halwa.
 Prepare a plate by greasing it with ghee and keep it ready.Take remaining 1/2 cup of water and add corn flour and mix well without any lumps. Mix this to the sugar syrup and cook over low flame. 
The mixture would be milk white at this stage. After cooking for 5-7 minutes the consistency will thicken and you can see that the mixture has turned glass like. The raw smell would have gone by now. 
.Add cardamom powder, ghee, orange food color and almond or cashew nuts. Mix well and transfer to the greased plate. Let it rest for half an hour. Cut into desired shapes and serve.

SESAME BALLS


SESAME BALLS
Sesame seeds are rich in iron, magnesium, manganese, copper, and calcium…vitamins etc.etc.etc.
Sesame seeds also contain phytosterols  associated with reduced levels of blood cholesterol.
ingredients
white sesame 3 cup
jaggery 1 ½ cup
cardamom  1 tsp
water   ½ cup
method
Roast the sesame seeds in a dry pan over medium heat. Stir continuously, and roast until they start to burst.Remove and spread them on a large plate.
In another heavy vessel, make syrup out of jaggery, by heating it with a 1/2 of water, and cook over medium heat to make a thick syrup. To check the right consistency, drop half a spoonful of the syrup into a cup of cold water, it will form a soft ball. Add the toasted sesame seeds to the syrup, and stir well. Let it cool down a little. When the temperature cools down to a state where the hand can withstand the heat, grease a little ghee on the palm of your hand, pick up a handful of the mixture and make small even sized balls using the hand. Repeat with the remaining mixture.

ഈ സിറപ് , എള്ള്  മിക്സ്‌ ചെയ്ധു ,ചുടോടെ ചെറിയ ഉരുളകലായ്  ഉരുട്ടുക.

Magic layer slices

easy dessert...looking like bread pices!!dont be confuse dear..its a magic sweet..you will love it,sure.try it nd enjoy..mmm i cant wait,i am going to finishing it...ha ha
Ingredients
1½ cups butter biscuit or 150 g, crumbled
5 tablespoons butter or 75 g, melted
1 cup chocolate chips or 180 g, semi-sweet
1 cup dried cranberries or 150 g
1 cup desiccated coconut or 75 g
1 cup sliced almonds or 125 g
1 tin  Condensed Milk or 395 g
Preparation
Line a 27cm × 18cm × 3cm baking tin with baking paper. Mix together the biscuit crumbs and the melted butter and press even over the base of the tin.
Sprinkle over the chocolate drops, dried cranberries, coconut and almonds. Pour the NESTLÉ® Sweetened Condensed Milk evenly over the top.
Bake in a 180 °C preheated oven for 25-30 minutes or until golden brown and firm in the center. Cut when cold into bars or squares

MUTTAMALA


MUTTAMALA
Ingredients:
Egg         5-6
Sugar     2    cup
Water     1   cups
Cardamom powder   ¼ tsp
Rose water  ¼ tsp
Description:
First the eggs are separated, and the yolks kept aside.Boil water and sugar in a pan.make a thick syrup,then add rose water and cardamom.the beaten egg yolk is now added the boiling syrup  through a small hole in the egg shell   so that it falls like a thread.Pour it continuously until the egg yolk in the shell has all been used up.By this time the yolk will be cooked. Reduce the heat and sprinkle a little cold water.Remove the egg strings from the syrup with out breaking them.Spread in a thali and keep slightly raised to remove the excess syrup.Mutta mala ready.Beat the egg white with the  3 tbsp sugar syrup. Steam the mixture.Cut into pieces of required shapes. Spread the yolk mixture on a plate and arrange the steamed egg white pieces in the middle.

RASAGULLA


Ingredients  for Rasgulla balls
Milk- 4 cups
Lemon juice  2 tbsp
All purpose flour (maida)- 1 tablespoon
For the sugar syrup
Sugar- 1 1/2 cup
Water- 4 cups
Cardamom powder ½ tsp
Method
 Heat milk in a pan and bring it to boil for about 8-10 minutes.
 When it starts boiling, add lemon juice and wait for the milk to curdle completely.
 Remove from the heat and let it cool for about 3-5 minutes.
 Pour over a thin muslin/cotton cloth and tie it with a tight knot. On straining this milk, the curd is obtained is called "paneer". wash paneer well using muslin cloth under cold running water to remove lemon juice flavor. Knead paneer for about 5-7 minutes to make a smooth dough. Add flour and knead again for few minutes. Make smalls of about 1 inch in size (8-10) of the dough and keep aside. Next make sugar syrup. Mix sugar, water, and cardamom powder in a saucepan and bring it to boil. Add paneer balls to the hot syrup on a medium heat and cook for about 15-20 minutes with lid partially covered. Transfer into a serving dish. Refrigerate and serve chilled.
